- Chicago Metallic pans are high-strength 14-ga. aluminum pans with a durable, hard-coat anodized surface; dark gray color absorbs radiant heat. Pans will not scratch, chip, peel, rust, or interact with food. Deep dish pans are 1-1/2"D; thin crust pans are 1/2"D. American Metalcraft pans are constructed of heavy-duty 18-ga. aluminum and feature wide rims.
